Zucchini Slice Recipe

My husband and I have decided that we are going to stop being terrible stewards of our money, buying take away every chance we get, eating so much junk food, way too much coke and not making food fro scratch. This has caused a huge amount of financial waste and it’s time we got serious about eating real food and stop wasting so much money that can be used for other things.

Today is Sunday, typically we would be in the car driving around, stopping for fast food and spending at least $50 every time we stop. I have a lot of zucchini in the house so instead of going out today, wasting fuel and food money, we have decided to stay home (saving fuel) and I have been baking to use some of the zucchini that needs to be eaten. I am so proud of us, normally we would duck into town for a pie and chocolate milk, but by me cooking lunch we have saved money and calories and stopped the waste of 2 zucchinis (many more in the garden). I have also made a zucchini bread and some peanut bisciuts but will post on them separately.

I found this recipe on The Whoot and it’s that good I have to share it with you guys! I forgot to take photos of my outcome and we have now eaten it lol!

It was super quick to make and we had it for lunch! So much better than bought food and way better for us!

Cinnamon Scrolls

So over the course of the last month I have been on a pretty hectic diet. Menopause has put weight on me I am not loving and it’s time it comes off and not only that my health could do with a bit of an overhaul! So, I have been taking shakes, superfoods and pretty much little else! The detox process was hard and I didn’t actually get over it, the headaches were relentless and the hunger pains were like labor pains. All in all it was pretty crap! For the past 5 days I have gone back to my normal eating, but less of it, and more mindful of the amount of sugar we are eating. I will get back to my diet next week, but I will tweak it a bit, because I cannot do those detox headaches. I am going to do most of our food from scratch, instead of instant packet stuff we usually grab. But for today I felt like trying these cinnamon scrolls, I have never made them before, and apart from leaving the cling wrap on them while they cooked *rolls eyes, another menopause moment, they are pretty good!

Homemade granola!

So I decided to try my hand at handmade muesli this weekend. I was intending to do it on Monday and go Live into Facebook but of course I forgot about that and made it this morning! The other thing I didn’t do was take photos of the process….I suck at this blogging thing! Anyway it worked out really well and tastes pretty good and I am really happy with the outcome. Chicken Chow Mein

I use this recipe all the time and I can testify to how easy it is to make and how delicious it is to eat. These days I want simple and tasty so I am always scouring the internet for recipes that suits those needs. I don’t own a cookbook at all, I find that Uncle Google gets me the best recipes that there are available.
